Yogurt-Covered Frozen Fruit

Not many people would call me a domestic goddess—and that’s putting it lightly. The fact is, I can’t really cook. Like, at all. The kids I used to babysit are still talking about what happened the time I tried to make them pancakes (that was six years ago, guys!).

So when I look for tasty, healthy food to eat, I like it simple—easy to make and not too strange. I might be willing to venture out of my comfort zone now and then, but I’m still almost as picky as your average seven-year-old.

One of my favorite food groups is fruit. I love the stuff. Apples, peaches, pineapple, raspberries—you name it, I’ll gobble it up. So when I started experimenting with cooking out of the box—literally, as in, no more frozen food reheated in a microwave—fruit was the obvious food of choice.

My dad used to keep a cup of grapes in the freezer, and my sisters and I loved the frozen treat as kids. I decided freezing more fruit could only be a good thing—with a little modification, of course.

Yogurt-Covered Frozen Fruit

Strawberries
Blueberries
Honey Greek yogurt

This recipe is pretty simple. I just washed the fruit, sliced the strawberries, popped them in yogurt, and stuck them in the freezer for a couple hours.

Okay, the “popping them in yogurt” didn’t go as smoothly as I had hoped. I used toothpicks to dip the fruit directly into the yogurt cups (fewer dishes!). The blueberries went pretty smoothly, once I got the hang of it. The strawberries—three times the size—were a little trickier.

 

When I was done, I stuck them in the freezer for a couple hours to cool. They freeze easily, but they melt even more easily; this is definitely an eat-right-away snack. However, they keep in baggies in the freezer for a while, so don’t feel obligated to chomp as many as possible within a few minutes for fear they’ll go to waste.

This finger food is great for kids who like to grab a handful of snacks and munch.

Note: Use Greek yogurt because it has a thicker consistency, which helps it stick to the fruit better than regular yogurt. I chose the honey flavor, which seemed to go over well with my taste-testing friends, and I also got recommendations for vanilla-flavored yogurt and frozen fruit.
